Ingredients

Units Scale
  • 3/4 cup (180 ml) milk
  • 2 tbsp (30 ml) white vinegar
  • 1 cup (120 g) all-purpose flour
  • 2 tbsp white sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 2 tbsp (30 g) butter, melted
  • cooking spray

Instructions

  1. Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".
  2. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
  3. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

Frequently Asked Questions

Why does this recipe combine milk and white vinegar and let it sit before mixing the batter?

Mixing 3/4 cup milk with 2 tbsp white vinegar and resting it for 5 minutes creates a quick homemade buttermilk. The acidity reacts with the 1/2 tsp baking soda in the dry ingredients to produce extra lift, which is what gives these pancakes their notably fluffy texture.

When is the right moment to flip the pancakes?

The recipe says to pour 1/4 cupfuls of batter into the skillet and cook until bubbles appear on the surface — that’s the visual cue to flip. Once you see bubbles forming across the top and the edges look set, slide a spatula underneath and turn once, then cook until the second side is browned.
