Lunches around here have been pretty fun lately because my son and I have been using our Christmas and winter cookie cutters to make edible art scenes. We love to decorate cookies, cupcakes and other sweets with sprinkles, candies and frosting so there is no reason why we can’t have just as much fun decorating healthy food, too. Edible art scenes are perfect for a cold, winter day when you need an indoor project and they are easy ways to trasnform an everday lunch or snack into something beautiful and special. We’ve discovered that sometimes playing with food can be perfectly acceptable!
The snowman sandwich is such a quick and easy lunch. Our snowman was a grilled ham and cheese melt but you can use the sandwich and cookie cutter shapes of your choice. If you have older kids, let them build their own scenes. My older son just turned three and he had a ball cutting out sandwiches, cheese and fruit with the cookie cutters. I hate to see all of my cookie cutters just collect dust in the pantry for most of the year so I was thrilled to find another use for them beyond the typical seasonal sugar cookies.

Ingredients
Snowman Sandwich
- Sandwich of your choice
- Snap peas
- Pretzel sticks
- Mustard
- Carrots
- Frosted shredded wheat
- Snowman cookie cutter
Peanut Butter Snack Ball Snowman
- 1/2 cup (90g) peanut butter
- 1/2 cup (170g) honey
- 1/2 cup (58g) powdered milk
- Coconut flakes
- Carrot nose
- Black licorice hat, buttons and eyes
- Pretzel and shredded wheat broom
Instructions
Snowman Sandwich
- Press the snowman cookie cutter into the sandwich.
- Using a knife trim the edges and peel the sandwich crust away from the cookie cutter. {Save the scraps to eat or try to keep them intact for another edible art scene with the crust frame of the cut-out sandwich shape.}
- Pop the snowman sandwich onto the plate.
- Decorate with carrot nose, mustard buttons, pretzel and cereal broom.
- Arrange the snap peas and pretzels to form a tree.
- Cover the ground with snowy frosted shredded wheat.
Peanut Butter Snack Ball Snowman
- Combine the peanut butter, honey and powdered milk in a bowl and stir until a smooth, creamy mixture is formed. You should be able to handle it without it sticking to your hands.
- If it is still sticky, add a little more powdered milk and blend it well.
- Then, let your kids help shape the peanut butter mixture into balls.
- Roll them in coconut flakes and powdered sugar to make them look snowy if desired.
- Stack the balls to form snowmen and decorate them as desired or store the balls in a sealed container in a refrigerator and assemble and decorate them when you are ready to eat them.
