Ingredients

Scale
  • 2 cups flour
  • 3/4 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon pumpkin pie spice (or just cinnamon)
  • 1 teaspoon vanilla extract
  • 1 Tablespoon orange zest
  • 3/4 cup orange juice
  • 2 Tablespoons vegetable oil
  • 1 egg
  • 1 1/2 cups fresh cranberries
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat oven to 350 degrees
  2. Mix together the flour, sugar, baking powder, salt, cinnamon or pumpkin pie spice, and baking soda in a large bowl.
  3. In a separate bowl, mix together the OJ, zest, egg, oil, and vanilla. Slowly add this mixture to the flour mixture.
  4. Add in the walnuts and cranberries. Mix well, be sure to get any bits off the bottom.
  5. Place muffin liners in the pan and fill each 3/4 to the top with batter.
  6. Bake 17-20 minutes until golden brown and cooked through.
