Zucchini Fritters

If you like french fries — and who doesn’t? — try these zucchini fritters. The process can also be applied to eggplant.

If you like french fries -- and who doesn't? -- try these zucchini fritters. The process can also be applied to eggplant.

Ingredients
  • Zucchini (green ) : 1
  • Egg : two lightly beaten
  • All purpose flour : 1 cup
  • Bread crumbs : ½ cup
  • Salt to taste
  • Oil for shallow frying
  • Herbs (dried or fresh) : parsley or thyme (2 tsp if using dried) / 3-4 tsp finely chopped if using fresh
Instructions
  1. Wash and cut the zucchini in finger size slender sticks.
  2. Mix the flour and salt together.
  3. Mix the herbs with the bread crumbs.
  4. Heat some oil in the pan up to the smoking point.
  5. Coat the zucchini sticks first in flour mixture, then dip it in the beaten egg and finally dusted it with herb and breadcrumb mixture and gently dropped it in the hot oil.
  6. Fry the zucchini sticks in batches until golden and crisp.
  7. Serve the hot zucchini fritters / fries with yogurt, sour cream or any cheese dip.

  1. I don’t know that I’d consider this a fritter, as much as just … well .. fried zucchini sticks. A fritter would be the zucchini shredded or chopped and mixed a batter (egg, milk, flour, spices) and then fried.

    I’ve never seen anything that’s just breaded and fried called a fritter.

  2. I uderstand your point Kara. In America, that is the way to make a fritter.
    In many Asian countries however, a slice of vegetable when breaded, dipped in a batter and deep fried is called fritter.
    Not many people would use that technique to zucchini, hence this is rather uncommon I would say.
    However, zucchini were so tender, I thought why to shred them, lets dipped in batter and fried it. :)
