Description

These no-bake Dark Chocolate Coconut Bars are a sweet and easy snack, combining dates, coconut, oats, and almond butter, topped with rich dark chocolate.


Ingredients

  • 1 1/2 cups pitted dates
  • 1 cup shredded coconut
  • 1 cup quick-cook oats
  • 1/2 tsp salt
  • 3/4 cup almond butter
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • 7 oz dark chocolate

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a food processor, combine the pitted dates, shredded coconut, quick-cook oats, salt, almond butter, honey, and vanilla extract. Pulse until the mixture is well combined and forms a sticky dough.
  3. Press the mixture evenly into the prepared baking pan, using the back of a spoon or your hands to smooth the surface.
  4. Melt the dark chocolate in a microwave-safe bowl or over a double boiler until smooth.
  5. Pour the melted chocolate over the pressed mixture in the pan, spreading it evenly with a spatula.
  6. Refrigerate the bars for at least 1 hour, or until the chocolate is set and the bars are firm.
  7. Once set, lift the bars out of the pan using the parchment overhang and cut into squares.

Notes

These bars can be stored in an airtight container in the refrigerator for up to a week. For a nut-free version, substitute almond butter with sunflower seed butter. You can also use maple syrup instead of honey for a vegan option.
