- 2 cups rolled oats
- 1/4 tsp cinnamon powder
- 1/2 tsp cardamom powder
- 1/4 tsp salt
- 1 cup chopped nuts (mix of almonds, walnuts, and pecans)
- 1/4 cup flaked coconut
- 1/4 cup sweetened shredded coconut
- 1/4 cup coconut oil
- 1/4 cup honey
Instructions
- Preheat the oven to 325°F (163°C).
- In a microwave-safe bowl, combine the coconut oil and honey. Heat in the microwave for 30 seconds, then remove and stir until completely melted and combined.
- In a large mixing bowl, combine the rolled oats, cinnamon powder, cardamom powder, salt, chopped nuts, flaked coconut, and sweetened shredded coconut.
- Pour the melted coconut oil and honey mixture over the dry ingredients. Stir well to ensure everything is evenly coated.
- Spread the mixture evenly onto a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the granola is golden brown and fragrant.
- Remove from the oven and let it cool completely on the baking sheet. The granola will become crispier as it cools.
- Once cooled, store the granola in an airtight container at room temperature for up to two weeks.
