Description

These slightly sweet and highly addictive wine-based popsicles combine ripe plums with pinot noir for a refreshing treat.


Ingredients

  • 1/2 cup sugar
  • 1/2 cup water, divided
  • 6 plums, peeled and sliced
  • 1 cup pinot noir

Instructions

  1. In a saucepan, combine the sugar and ¼ cup of the water. Heat over medium heat until the sugar dissolves and the mixture just begins to simmer.
  2. Add the sliced plums to the saucepan and cook for about 1 minute, stirring gently.
  3. Remove the saucepan from heat and allow the mixture to cool slightly.
  4. Transfer the plum mixture to a blender and blend until smooth.
  5. Stir in the remaining ¼ cup of water and the pinot noir into the blended plum mixture.
  6. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  7. Insert popsicle sticks and freeze for at least 4 hours, or until solid.

Notes

For a more intense flavor, let the plum mixture cool completely before blending. Use ripe plums for the best sweetness and flavor. These popsicles pair well with a glass of wine on the side. Store in the freezer for up to 2 weeks.
