- 1/2 cup sugar
- 1/2 cup water, divided
- 6 plums, peeled and sliced
- 1 cup pinot noir
Instructions
- In a saucepan, combine the sugar and ¼ cup of the water. Heat over medium heat until the sugar dissolves and the mixture just begins to simmer.
- Add the sliced plums to the saucepan and cook for about 1 minute, stirring gently.
- Remove the saucepan from heat and allow the mixture to cool slightly.
- Transfer the plum mixture to a blender and blend until smooth.
- Stir in the remaining ¼ cup of water and the pinot noir into the blended plum mixture.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert popsicle sticks and freeze for at least 4 hours, or until solid.
Notes
For a more intense flavor, let the plum mixture cool completely before blending. Use ripe plums for the best sweetness and flavor. These popsicles pair well with a glass of wine on the side. Store in the freezer for up to 2 weeks.
