Description

Handmade gnocchi with fresh spinach sauce


Ingredients

Scale
  • Gnocchi:
  • 2 lbs potatoes, steamed, peeled and mashed
  • 5 lbs flour
  • salt
  • Spinach sauce:
  • 3 bunches spinach, chopped
  • Bacon
  • 1/4 cup white wine
  • 2 cups crème fraîche
  • Salt

Instructions

  1. Gnocchi:
  2. Combine mashed potatoes with flour and salt
  3. Knead until dough is formed
  4. Roll into log about 4-5 inches in diameter
  5. Cut off 3-4 inches at a time
  6. Roll smaller piece out into long snake, about 1 inch in diameter
  7. Pinch off about an inch at a time
  8. Roll it into a small ball then flatten and fold around your thumb
  9. Place in floured bowl or sheet
  10. To cook the gnocchi, you can boil or sauté:
  11. To sauté, heat olive oil, then place gnocchi in pan, making sure to brown each one on both sides.
  12. To boil, place in boiled water and remove them when they begin to float.
  13. Spinach Sauce:
  14. Sauté bacon
  15. Add spinach
  16. Add white wine, crème fraîche and salt
  17. Blend
  18. Serve over gnocchi
