Description

A nutritious and flavorful stir-fry using radish greens, enhanced with garlic, onions, and a hint of spice from green chillies.


Ingredients

  • Radish Greens - A small bunch, washed and finely chopped
  • Onion - 1 large, finely chopped
  • Garlic - 8 to 10 pods, chopped
  • Green chilli - 2, chopped (adjust to taste)
  • Salt - to taste
  • Oil - 1 to 2 tsp
  • Mustard seeds - 1 tsp
  • Urad Dal - 1 tsp

Instructions

  1. Wash the radish greens thoroughly and chop them finely.
  2. In a wok, kadai, or pan, heat 1 to 2 teaspoons of oil over medium heat.
  3. Once the oil is warm, add 1 teaspoon of mustard seeds and 1 teaspoon of urad dal. Allow them to crackle and splutter.
  4. Add the chopped garlic to the pan. Stir and cook until the garlic releases its aroma.
  5. Add the finely chopped onion and green chillies to the pan. Sauté for about 3-4 minutes until the onions are soft and translucent.
  6. Stir in the chopped radish greens. Cook for 5-6 minutes, stirring occasionally, until the greens are wilted and tender.
  7. Season with salt to taste and mix well.
  8. Serve hot as a side dish or with rice or roti.

Notes

Radish greens are often discarded but are packed with nutrients. This dish is a great way to utilize them. Adjust the green chillies to your spice preference. Serve with rice or roti for a complete meal. Store leftovers in an airtight container in the refrigerator for up to 2 days.
