Description

Transform day-old baguettes into crispy croutons with a fragrant blend of Ottoman spices, perfect for elevating soups or enjoying as a savory snack.


Ingredients

Scale
  • 2 medium sized baguettes or 1 long baguette(preferably 1 day old)
  • 3 cloves garlic-minced finely
  • 3 tbsp olive oil
  • 3 tbsp Ottoman spice mix
  • 1 tsp Kosher salt (or coarse sea salt)

For ottoman spice mix

  • 1/2 tsp saffron strands
  • 1 tbsp sumac ( you can get this at any Arabic/Middle eastern store)
  • 1 tbsp oregano
  • 1 tbsp chilli flakes
  • 1/2 tbsp ground cinnamon
  • 1 tbsp ground mint
  • 1 t bsp ground fennel
  • 1 tbsp dried marjoram
  • 1 tbsp thyme
  • 1 tbsp dried ginger
  • 1 tbsp ground cumin

Instructions

  1. Prepare the Ottoman spice mix by combining saffron, red chili flakes, thyme, and marjoram. Grind them to a fine powder and store in an airtight container.
  2. Cut the baguette into 1-inch cubes.
  3. Heat the olive oil in a saucepan over medium heat.
  4. Add the minced garlic to the oil and sauté for 1-2 minutes until fragrant.
  5. Add the baguette cubes to the pan and toss to coat them evenly with the garlic oil.
  6. Sprinkle the Ottoman spice mix and salt over the bread cubes, ensuring even coverage.
  7. Continue to cook, stirring occasionally, for 8-10 minutes until the croutons are golden brown and crispy.
  8. Remove from heat and allow to cool before serving.

Notes

These croutons can be stored in an airtight container for up to a week. Use them to add a flavorful crunch to salads or soups. The Ottoman spice mix can also be used as a seasoning for roasted meats or vegetables.
