Honey, Cherry and Goat Cheese Focaccia

Description

Celebrate summer with a pan of this sweet and salty Honey, Cherry and Goat Cheese Focaccia! This soft bread works as an appetizer or a dessert, and pairs perfectly with Cavit Moscato wine.


Ingredients

  • 1 lb store-bought pizza dough {find my homemade recipe link above}
  • 1 cup fresh cherries (pitted and halved)
  • ¼ cup honey goat cheese crumbles
  • 23 tbsp honey
  • 2 tbsp olive oil
  • 12 tsp salt
  • 12 tsp sugar

Instructions

  1. To start, grab your pizza dough, place it in a lightly oiled bowl, cover tightly with plastic wrap or a towel, and let rise for about 1 hr.
  2. After the rise, grab a baking sheet, line with parchment paper, and grease the surface using 1 tbsp of oil. Gently stretch the dough on the prepared sheet, arranging it in a roughly oval shape. Spray lightly with water, cover with more plastic wrap, and allow to rise for another 30 minutes.
  3. After this, preheat convection oven to 400F (conventional 425F).
  4. Arrange your cherry halves on the focaccia. In a small bowl, whisk together the remaining 1 tbsp of olive oil with 2 tbsp of water, and spoon this all over the surface.
  5. Sprinkle on the salt and sugar, and bake focaccia for 18-22 minutes, until golden brown and puffy.
  6. As soon as the focaccia is out, sprinkle the surface with the goat cheese, and drizzle on the honey. Garnish with mint if desired, and enjoy with Cavit Moscato wine.
