Homemade Dulce de Leche

Description

Dulce de leche (milk jam/confiture de lait) is a thick, creamy caramel substance made from cooked milk and sugar.


Ingredients

Scale
  • 1 litre full fat milk
  • 300g caster sugar
  • 1/2 tsp baking soda/bicarbonate of soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cinnamon stick (optional)

Instructions

  1. Put all the ingredients in a high sided pot or saucepan.
  2. Bring to the boil, being careful not to let it bubble over, as the milk can very suddenly rise dramatically.
  3. Lower the heat, and cook on a medium-low heat for 1.5-2.5 hours, stirring every 5-10 minutes.
  4. Leave to cool, and store in the fridge in a clean jar for up to one week.
