Ingredients

  • ¼ medium watermelon
  • ½ cup 95 g crumbled or cubed feta cheese
  • 2 cups 30 g arugula
  • ¼ cup sliced red onion (about ¼ of an onion)
  • 2 Tbsp chopped mint
  • 2 Tbsp chopped basil
  • 1 Tbsp 15 mL olive oil + more for cooking
  • ¼ tsp each of salt and pepper

Instructions

  1. Cut watermelon into 1 inch (2.5 cm) thick slices and remove the rind. Lightly brush each piece with olive oil.
  2. In a grill pan, saute pan, or on the grill, cook watermelon at medium/high heat until char lines develop or until watermelon lightly browns, about 3 minutes each side.
  3. Remove from heat and chop watermelon into large chunks.
  4. In large bowl, gently combine watermelon, feta, arugula, red onion, mint, and basil.
  5. Whisk together 1 Tbsp olive oil, salt, and pepper. Gently combine with the rest of the salad. Serve warm or chilled.
