Description

Food and wine for entertaining doesn’t have to be complicated. Make simply delicious roasted tomato and puff pastry bites paired perfectly with a bottle of Garnacha wine.


Ingredients

Scale
  • 4 Puff pastry shells
  • 1 Pint cherry tomatoes, halved
  • 1 Tablespoon olive oil
  • 1 Teaspoon fresh thyme leaves
  • 2 Tablespoons chopped fresh parsley
  • Salt and pepper to taste plus additional pinch of sea salt

Instructions

  1. Pre-heat the oven to 425 degrees.
  2. In a bowl, combine the tomatoes, olive oil, thyme, salt and pepper. Spread out on a baking sheet lined with parchment paper. On the same baking sheet or a second one, place the pastry shells. Bake both in the same oven for 18 – 20 minutes.
  3. Toss the roasted tomatoes with the parsley. Use a knife to remove the top of each pastry shell and fill each with equal amounts of the tomato mixture.
