Description

Soft, melting blue brie cheese is simply served with reduced balsamic and strawberries for a perfect summer crostini.


Ingredients

Units Scale
  • 1 loaf of French or sourdough bread, sliced on a diagonal
  • 1 cup of strawberries, hulled and sliced
  • 1/2 teaspoon sugar
  • 1/2 cup good quality balsamic vinegar
  • Saga Blue Brie

Instructions

  1. Toss the sliced strawberries with the sugar and set aside to macerate for about 10 minutes.
  2. In a small saucepan, bring the balsamic vinegar to a simmer over medium heat. Cook until reduced by about half, approximately 5-7 minutes, until it coats the back of a spoon.
  3. Preheat the broiler on your oven.
  4. Place the bread slices on a baking sheet and broil for 1-2 minutes on each side, until lightly toasted and golden brown.
  5. Spread a generous amount of Saga Blue Brie on each toasted bread slice.
  6. Top with the macerated strawberries and drizzle with the balsamic reduction.
  7. Serve immediately while the bread is warm and the cheese is soft.

Notes

Use a good quality balsamic vinegar for the best flavor. The crostini are best served immediately while the bread is warm and the cheese is soft. You can prepare the balsamic reduction and macerated strawberries ahead of time to save on prep work during entertaining.
