Description

The combination of lemon and garlic shrimp pairs perfectly with crisp blanco Rioja wine. Be sure to have bread on hand to devour the sauce left in the pan.


Ingredients

Scale
  • 2 lbs medium shrimp
  • 3 tbsp olive oil (or butter, melted)
  • 4 cloves garlic, minced
  • zest of one lemon
  • 1/4 tsp crushed red pepper
  • 1/2 tsp salt
  • juice of one lemon
  • 1/4 cup chopped parsley

Instructions

  1. In large bowl, combine shrimp, 2 tablespoons of olive oil or melted butter, garlic, lemon zest, crushed red pepper, and salt.
  2. Let marinate for 2 hours, up to overnight.
  3. In large skillet, add remaining tablespoon of olive oil or butter over medium-high heat.
  4. Once hot, add shrimp.
  5. Cook 3-4 minutes on each side, until shrimp is white and no longer translucent.
  6. Once cooked, remove from heat.
  7. Top with fresh squeeze of lemon juice and fresh parsley.
