- 2 1/4 teaspoons active dry yeast
- 1 1/4 cups warm milk (110°-120°F)
- 2 tablespoons corn syrup
- 3 1/4 cups all-purpose flour
- 1 teaspoon salt
- 1/2 cup baking soda
- 1 large egg
- Coarse salt (or pretzel salt)
Instructions
- Preheat your oven to 450°F. Line a baking sheet with parchment paper and set aside.
- In a mixer bowl, add the warm milk. Sprinkle the active dry yeast over the top and let it sit for 5-10 minutes until the yeast blooms.
- Add the corn syrup to the yeast mixture and stir gently with a fork.
- Gradually add the all-purpose flour and salt to the yeast mixture, mixing until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until it is smooth and elastic.
- Divide the dough into small, bite-sized pieces.
- In a large pot, bring 8 cups of water and the baking soda to a boil.
- Drop the dough pieces into the boiling water, a few at a time, and boil for about 30 seconds. Remove with a slotted spoon and place on the prepared baking sheet.
- Beat the egg in a small bowl and brush over the pretzel bites.
- Sprinkle the pretzel bites with coarse salt.
- Bake in the preheated oven for 8-10 minutes, or until the pretzels are golden brown.
- Remove from the oven and let cool slightly before serving.
Notes
For a different flavor, try sprinkling the pretzel bites with garlic powder or cinnamon sugar before baking. Store any leftovers in an airtight container for up to 2 days. Reheat in the oven for a few minutes to regain crispiness.
