Description

Feel-better popsicles are just the thing that’s needed during this cold season. They pair well with chicken soup, chamomile tea, piles of tissues, and excessive coughing, sneezing, and Netflix binge-watching.


Ingredients

  • 2 tablespoons lemon juice
  • 1/4 cup orange juice
  • 3 cups diced mango (from 2 large or 4 small very ripe mangos)
  • 2-inch piece ginger, peeled and roughly chopped
  • 2-inch piece of turmeric, peeled and roughly chopped (or 2 tablespoons ground turmeric)
  • 1/3 cup honey

Instructions

  1. Prepare Ingredients: Peel and roughly chop the ginger and turmeric (if using fresh). Dice the mangoes into small pieces.
  2. Blend Ingredients: In a food processor or blender, combine the lemon juice, orange juice, diced mango, ginger, turmeric, and honey.
  3. Blend Until Smooth: Blend the mixture until completely smooth.
  4. Fill Popsicle Molds: Pour the blended mixture into popsicle molds.
  5. First Freeze: Place the molds in the freezer for about 15-20 minutes or until they are just firm enough to hold a popsicle stick.
  6. Insert Popsicle Sticks: Insert a popsicle stick into each mold, making sure it stands straight.
  7. Complete Freezing: Return the molds to the freezer and freeze until the popsicles are completely set, which should take at least a few hours.
  8. Serve: To serve, briefly dip the popsicle molds in warm water to release the popsicles.

Notes

  • For a vegan alternative, substitute honey with agave syrup or maple syrup.
  • If you prefer a smoother texture, strain the mixture to remove any fibers or bits before freezing.
  • You can add a pinch of black pepper to enhance the absorption of turmeric.
