Description

Crispy zucchini fritters are perfect as a snack, side, or light dinner. A delicious way to enjoy your veggies!


Ingredients

Units
  • 1 cups (237 ml) whole wheat flour
  • 0.5 cups (118 ml) grated cheese
  • 2 tbsp chopped fresh chives
  • 2 cups (473 ml) grated zucchini
  • 1 tbsp flax seeds
  • 1 egg
  • salt
  • pepper
  • olive oil

Instructions

  1. Wash zucchini, chop off the ends, and grate them (no need to peel).
  2. Add spices, egg, seeds, cheese, chives, and flour.
  3. Combine the mixture and shape into patties.
  4. In a skillet, heat some olive oil.
  5. Fry patties until golden on both sides.
  6. Place the patties on paper towels to absorb excess oil.
  7. Serve.

Notes

  • To remove excess moisture from the grated zucchini, place it in a colander and sprinkle with salt. Let it sit for 10-15 minutes, then squeeze out the liquid before adding to the batter.
  • For a gluten-free version, substitute the whole wheat flour with a gluten-free all-purpose flour blend.
  • Store leftover fritters in an airtight container in the refrigerator for up to 3 days. Reheat gently in a pan or microwave.
