Description

Sweet and savory breakfast sausage, bursting with wild blueberry and thyme. Perfect with pancakes or eggs!


Ingredients

  • 1 1/2 lbs (680 g) ground pork
  • 1 cups (237 ml) fresh bread crumbs
  • 3 tbsp Bonne Maman Wild Blueberry Preserves
  • 2 green onions (finely chopped)
  • 1 1/2 tbsp fresh thyme leaves
  • 1 large egg (lightly beaten)
  • 1 1/4 tsp kosher salt
  • 1/2 tsp ground black pepper

Instructions

  1. Preheat oven to 350°F (177°C).
  2. Line a baking sheet with parchment paper or foil.
  3. Using wet hands, form the sausage mixture into 24 “links” or patties.
  4. Arrange the sausages on the prepared baking sheet, leaving about an inch between each sausage.
  5. Bake for 20-25 minutes at 350°F (177°C), or until an instant-read thermometer inserted into the center registers at least 165°F (74°C), flipping halfway through.

Notes

  • For a richer flavor, use a mix of ground pork and ground sausage.
  • If fresh thyme is unavailable, substitute 1 teaspoon of dried thyme.
  • These sausages freeze well! Cool completely before storing in a freezer-safe bag for up to 3 months.
