Description
Sweet and savory breakfast sausage, bursting with wild blueberry and thyme. Perfect with pancakes or eggs!

- 1 1/2 lbs (680 g) ground pork
- 1 cups (237 ml) fresh bread crumbs
- 3 tbsp Bonne Maman Wild Blueberry Preserves
- 2 green onions (finely chopped)
- 1 1/2 tbsp fresh thyme leaves
- 1 large egg (lightly beaten)
- 1 1/4 tsp kosher salt
- 1/2 tsp ground black pepper
Instructions
- Preheat oven to 350°F (177°C).
- Line a baking sheet with parchment paper or foil.
- Using wet hands, form the sausage mixture into 24 “links” or patties.
- Arrange the sausages on the prepared baking sheet, leaving about an inch between each sausage.
- Bake for 20-25 minutes at 350°F (177°C), or until an instant-read thermometer inserted into the center registers at least 165°F (74°C), flipping halfway through.
Notes
- For a richer flavor, use a mix of ground pork and ground sausage.
- If fresh thyme is unavailable, substitute 1 teaspoon of dried thyme.
- These sausages freeze well! Cool completely before storing in a freezer-safe bag for up to 3 months.
