Description

An indulgent Southern masterpiece, this burger comes loaded with a juicy beef patty smothered in creamy pimento cheese and sweet bacon jam, all served on a homemade buttermilk biscuit.


Ingredients

  • 2 teaspoons (9.9ml) Rapid Rise Dry Yeast
  • 1/4 cup (59ml) Warm Water (Around 115 degrees)
  • 2 teaspoons (9.9ml) Sugar
  • 2 1/2 cups (591ml) Flour (Soft Winter Wheat)
  • 2 1/2 teaspoons (12.3ml) Baking Powder
  • 1/2 teaspoon (2.5ml) Baking Soda
  • 1 1/2 teaspoons (7.4ml) Salt
  • 2 teaspoons (9.9ml) Sugar
  • 1/3 cup (79ml) Melted Butter
  • 1 cup (237ml) Buttermilk (Full-Fat)
  • Yeast Mixture
  • 2 pounds (0.91kg) Bacon
  • 3/4 pound (340g) Brown sugar
  • 1 1/2 cups (355ml) Sweet onions
  • 6 cloves Garlic
  • 2 Tablespoons (30ml) Hot Sauce
  • 1/2 teaspoon (2.5ml) salt
  • 1 teaspoon (4.9ml) ground Black pepper
  • Beef (a blend of chuck and short rib)
  • Pimento Cheese

Instructions

  1. Biscuits: Mix Yeast Ingredients (Rapid Rise Dry Yeast, Warm Water, and Sugar) in a large bowl while you gather the rest of the ingredients. Let bloom for 30 minutes.
  2. Whisk together all dry ingredients (Flour, Baking Powder, Baking Soda, Salt, and Sugar). Add wet ingredients (Melted Butter and Buttermilk) to dry ingredients, and stir with hands to just combine, being careful not to overwork the dough.
  3. Cover dough and rest in a warm area for 30-40 minutes to rise.
  4. Place dough on a floured surface and knead to smooth.
  5. Roll out dough to 3/4 inch (1.9 cm) thick, and cut biscuits with a biscuit cutter (2 1/2 inch / 6.4 cm diameter is suggested).
  6. Place on a buttered sheet pan nestled together and brush tops with butter. Allow to rest and rise for 15 minutes.
  7. Bake at 425°F (220°C) for 8 minutes, or until tops are golden brown.
  8. Remove from oven and brush immediately with butter.
  9. Bacon Jam: Chop the bacon into a small dice.
  10. Cook until just done but not crispy. Drain off the grease, reserving bacon and 1/4 cup (59ml) of the grease.
  11. Chop the onions into small dice and cook the onions in 1/4 cup (59ml) of the bacon fat until translucent. Add brown sugar and cook on low for ten minutes.
  12. Add garlic, cook for two minutes. Add the bacon back to the mixture, add hot sauce and black pepper. Cook for 5 minutes until it comes together into a jam consistency.
  13. Allow to cool.
  14. Divide the beef blend (chuck and short rib is suggested) into 6 equal portions.
  15. Form into patties and season with salt and pepper.
  16. Place a cast iron skillet over medium high heat. When it is preheated, add a little oil to the pan and cook the hamburger patties for 2-3 minutes depending on your preference.
  17. After flipping the burgers, place 4 ounces (113g) of pimento cheese on top so that it will begin to soften from the heat.
  18. When burgers are cooked to your liking, pull off and place on the bottom portion of the sliced biscuits and top with bacon jam.
