Description

Use up the last of summer’s bounty with a warm autumn crumble. Bake with the fruit of your choice and a spice to pair.

Ingredients

Units Scale

For the Filling:

  • 45 nectarines, cored and sliced
  • 1/2 teaspoon ground cinnamon (2.5 g)
  • Juice of 1 lemon (about 2 tablespoons or 30 ml)
  • 1/4 cup brown sugar (50 g)
  • 2 tablespoons all-purpose flour (15 g)

For the Topping:

  • 1 cup all-purpose flour (125 g)
  • 1 cup rolled oats (90 g)
  • 1 teaspoon ground cinnamon (2.5 g)
  • 1/2 cup brown sugar (100 g)
  • 1 stick unsalted butter, chilled and cut into small pieces (8 tablespoons or 113 g)
  • 1/2 cup toasted nuts, chopped (optional, 50 g)

Instructions

Prepare the Filling:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Mix the Filling: In a large baking dish, combine the sliced nectarines, ground cinnamon, lemon juice, brown sugar, and all-purpose flour. Toss the ingredients together until the nectarines are evenly coated with the mixture.

Prepare the Topping:

  1. Combine Dry Ingredients: In a mixing bowl, combine the all-purpose flour, rolled oats, ground cinnamon, and brown sugar.
  2. Add Butter: Add the chilled butter pieces to the dry ingredients. Using a food processor or your hands, mix until the mixture resembles coarse breadcrumbs. The mixture should hold together when pressed.
  3. Add Nuts: If using, fold in the chopped toasted nuts.

Assemble and Bake:

  1. Top the Filling: Evenly spread the topping mixture over the prepared fruit filling in the baking dish, covering the nectarines completely.
  2. Bake: Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
  3. Cool and Serve: Remove from the oven and let the crumble cool for a few minutes before serving. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. Sprinkle with additional toasted nuts if desired.

Notes

  • Butter Consistency: Make sure the butter is chilled when you mix it into the topping ingredients. This ensures a crumbly, crisp topping.
  • Nectarine Ripeness: Use ripe nectarines for the best flavor. If your nectarines are very juicy, you might want to add an additional tablespoon of flour to the filling to help thicken the juices as they bake.
  • Add-Ins: Feel free to customize the topping with other add-ins like shredded coconut, spices such as nutmeg, or even a splash of vanilla extract for added flavor.
  • Nut-Free Option: If you’re allergic to nuts or prefer not to use them, simply omit the toasted nuts from the topping.
