Description

Crispy waffle bites get a sophisticated twist with homemade (or store-bought!) rosemary apple butter. A fun and flavorful appetizer perfect for brunch or parties.


Ingredients

  • 1 cups (237 ml) all purpose flour
  • 1/3 cup whole wheat flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 tsp black pepper
  • 2 eggs
  • 1/2 cup unsalted butter
  • 1 cups (237 ml) milk
  • zest of 1 orange
  • rosemary apple butter

Instructions

  1. Brown the butter in a saucepan over medium heat until golden brown and nutty.
  2. Transfer the browned butter to a heatproof liquid measuring cup and set aside.
  3. Whisk the dry ingredients together in a large bowl and set aside.
  4. In a medium bowl, whisk the eggs with the milk.
  5. Add the milk mixture to the dry ingredients and stir until combined.
  6. Pour in the browned butter and stir until incorporated.
  7. Preheat a waffle iron to a medium temperature (adjust as needed).
  8. Pour about 1/3 cup of batter into the center of the waffle iron.
  9. Cut each cooked waffle into small squares.
  10. Place a 1/2 teaspoon of apple butter into one square of each waffle.
  11. Arrange the waffles on a platter.
  12. Sprinkle with orange zest and black pepper.
  13. Enjoy!

Notes

  • For perfectly crisp waffle bites, cook them in batches, ensuring the waffle iron isn’t overcrowded.
  • If you don’t have fresh rosemary, 1 teaspoon of dried rosemary can be used in the apple butter (reduce cooking time slightly).
  • Store leftover waffle bites in an airtight container at room temperature for up to 2 days; apple butter can be refrigerated for up to a week.
