Description
Crispy waffle bites get a sophisticated twist with homemade (or store-bought!) rosemary apple butter. A fun and flavorful appetizer perfect for brunch or parties.

- 1 cups (237 ml) all purpose flour
- 1/3 cup whole wheat flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/4 tsp black pepper
- 2 eggs
- 1/2 cup unsalted butter
- 1 cups (237 ml) milk
- zest of 1 orange
- rosemary apple butter
Instructions
- Brown the butter in a saucepan over medium heat until golden brown and nutty.
- Transfer the browned butter to a heatproof liquid measuring cup and set aside.
- Whisk the dry ingredients together in a large bowl and set aside.
- In a medium bowl, whisk the eggs with the milk.
- Add the milk mixture to the dry ingredients and stir until combined.
- Pour in the browned butter and stir until incorporated.
- Preheat a waffle iron to a medium temperature (adjust as needed).
- Pour about 1/3 cup of batter into the center of the waffle iron.
- Cut each cooked waffle into small squares.
- Place a 1/2 teaspoon of apple butter into one square of each waffle.
- Arrange the waffles on a platter.
- Sprinkle with orange zest and black pepper.

Notes
- For perfectly crisp waffle bites, cook them in batches, ensuring the waffle iron isn’t overcrowded.
- If you don’t have fresh rosemary, 1 teaspoon of dried rosemary can be used in the apple butter (reduce cooking time slightly).
- Store leftover waffle bites in an airtight container at room temperature for up to 2 days; apple butter can be refrigerated for up to a week.
