Vegetarian Tacos with Black Beans and Paneer

Description

Paneer is sautéed with veggies and beans for a fun new take on tacos and served with rice, fresh salsa, and avocado cream.


Ingredients

Units

Avocado Cream Sauce

  • 1 avocado, big
  • 1/2 cup (120 ml) yogurt
  • salt & pepper to taste
  • 1 1/2 tbsp (22 ml) lime juice

Cilantro Rice

  • 1 cup (240 ml) rice
  • 1 tbsp cilantro/coriander, finely chopped
  • 1 tsp lime juice

Paneer & Black Bean Veggies

  • 1/2 cup (120 ml) sweet corn
  • 1/2 cup (120 ml) black beans, cooked
  • 3/4 cup (180 ml) paneer, cut into small cubes
  • 1/2 green pepper/capsicum, thinly sliced
  • 1 tsp vegetable oil
  • 1/2 tsp cumin seeds
  • juice of 1/2 lime
  • 3/4 tsp taco seasoning
  • salt, to taste

Tomato Salsa

  • 3 medium tomatoes, seeded and chopped (about 1 1/2 cups)
  • 1 small jalapeño pepper, chopped
  • 1/4 cup onion, chopped (preferably white onion)
  • 1/3 cup cilantro/coriander, chopped
  • 1 1/4 tbsp fresh lime juice
  • 1/2 tsp sugar (optional)
  • 1 clove garlic, finely chopped (optional)
  • salt, to taste

To Serve

  • 8 taco shells

Instructions

Avocado Cream Sauce

  1. Cut and peel the avocado and take out it’s pulp in a bowl.
  2. Add greek yogurt to it.
  3. Transfer to a food processor, add lime juice, salt and pepper and pulse till smooth and creamy. Transfer to a bowl and set aside.

Cilantro Rice

  1. Take 1 cup of cooked rice in a bowl. I used long grain Asian rice, you can use any rice of your choice.
  2. Add chopped cilantro/coriander leaves, some lime juice to it.
  3. Mix till well combined and set aside.

Paneer & Black Bean Veggies

  1. Add 1 tsp of oil to a pan on medium heat. Once the oil is hot, add cumin seeds to it and wait till the seeds crackle.
  2. Once the seeds crackle and the paneer cubes, sliced green pepper and taco seasoning. Saute for 2 minutes.
  3. Now add cooked black beans, corn, juice of 1/2 lime and salt to taste. Mix everything together till well combined.

Tomato Salsa

  1. In a bowl, combine the chopped tomatoes, jalapeño, onion, cilantro, lime juice and sugar and garlic (if using); season with salt and toss well. Set aside.

To Serve

  1. Place the rice, avocado cream sauce, tomato salsa and the veggies in separate bowls.
  2. Also place the taco shells and let everyone make their own tacos with their choice of filling and toppings!
