Description

This vegan chocolate and pumpkin pudding is a sweet, healthy, and comforting dessert that combines the rich flavors of chocolate with the seasonal taste of pumpkin.


Ingredients

  • 1 cup rice milk
  • 1/4 cup pumpkin puree
  • 3 tablespoons cocoa powder
  • Sugar, to taste
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 4 to 6 tablespoons corn starch (depending on how thick you like your pudding)

Instructions

  1. In a saucepan, whisk together the rice milk, pumpkin puree, cocoa powder, sugar, cinnamon, vanilla extract, and corn starch until smooth.
  2. Place the saucepan over medium heat and cook, whisking continuously, until the mixture thickens, about 5 minutes.
  3. Once thickened, remove the saucepan from the heat.
  4. Transfer the pudding to a bowl or individual serving dishes and refrigerate until cold before serving.

Notes

For a thicker pudding, use 6 tablespoons of corn starch. Adjust the sugar to your taste preference. This pudding is best served cold, so make sure to refrigerate it for at least an hour before serving. You can store leftovers in the refrigerator for up to 3 days.
