Description

Creamy, comforting, and completely vegan. This almond butter oatmeal is perfect for a cozy breakfast or a healthy side dish.


Ingredients

  • 10 tbsp rolled oats
  • 2.5 cups (592 ml) rice milk
  • 6 tsp maple syrup
  • 4 tsp almond butter
  • 0.5 tsp cinnamon
  • 1 vanilla bean
  • pinch of salt

Instructions

  1. In a small pan over medium heat, cook rolled oats with rice milk until the milk is almost absorbed and the oats are fluffy (5-6 minutes).
  2. Add maple syrup, cinnamon, salt, and vanilla. Cook for 2 minutes.
  3. Stir in the almond butter and cook for another 5 minutes, until creamy.

Notes

  • For a richer flavor, use almond milk instead of rice milk.
  • If you don’t have a vanilla bean, substitute 1 teaspoon of vanilla extract.
  • To make it ahead, prepare the oatmeal and store it in the refrigerator for up to 3 days; reheat gently before serving.
