- 10 tbsp rolled oats
- 2.5 cups (592 ml) rice milk
- 6 tsp maple syrup
- 4 tsp almond butter
- 0.5 tsp cinnamon
- 1 vanilla bean
- pinch of salt
Instructions
- In a small pan over medium heat, cook rolled oats with rice milk until the milk is almost absorbed and the oats are fluffy (5-6 minutes).
- Add maple syrup, cinnamon, salt, and vanilla. Cook for 2 minutes.
- Stir in the almond butter and cook for another 5 minutes, until creamy.
Notes
- For a richer flavor, use almond milk instead of rice milk.
- If you don’t have a vanilla bean, substitute 1 teaspoon of vanilla extract.
- To make it ahead, prepare the oatmeal and store it in the refrigerator for up to 3 days; reheat gently before serving.
