Description

Indulge in this simple and festive Valentine’s Day parfait, featuring layers of creamy yogurt, fresh berries, and heart-shaped pancakes.


Ingredients

Units Scale
  • 1 cup (240 ml) vanilla yogurt or plain Greek yogurt
  • 1/2 cup sliced strawberries
  • 1/2 cup raspberries
  • 1/4 cup pomegranate seeds
  • 2 tbsp (30 ml) strawberry or raspberry freezer jam (optional)
  • 2 pancakes

Instructions

  1. Prepare the pancakes according to your favorite recipe or use store-bought. Once cooked, use a heart-shaped cookie cutter to cut out heart shapes from the pancakes.
  2. In a parfait dish or a cup, layer 1/3 of the yogurt at the bottom.
  3. Add a layer of mixed berries and pomegranate seeds over the yogurt.
  4. If using, drizzle 1 tbsp of strawberry or raspberry jam over the fruit layer.
  5. Repeat the layers with the remaining yogurt, berries, and jam.
  6. Top the parfait with the heart-shaped pancakes. You can also layer the heart pancakes within the parfait for a decorative touch.

Notes

  • For a healthier option, use plain Greek yogurt and skip the jam.
  • You can store any leftover pancakes in an airtight container for up to 2 days.
  • Feel free to substitute with any red fruits you have on hand, such as cherries or red grapes.
