Description
These delightful jelly donut muffins are a perfect treat for Valentine’s Day, featuring a sweet raspberry jelly center and a dusting of powdered sugar.

- 2 cups (480 ml) all-purpose flour
- 1 tbsp baking powder
- 1/8 tsp salt
- 1/2 cup (120 ml) sugar
- 2 eggs
- 1 cup (240 ml) milk
- 1/3 cup + 1 tbsp (95 ml) canola oil
- 1 tsp vanilla extract
- Approx 1/3 cup (80 ml) raspberry jelly
- 1/2 cup (120 ml) butter, melted
- 3/4 cup (180 ml) granulated sugar, for coating
Instructions
- Preheat the oven to 400 degrees Fahrenheit. Line a muffin tin with paper liners and set aside.
- In a large bowl, combine the flour, baking powder, salt, and sugar. Mix well to ensure even distribution of the baking powder.
- In a separate bowl, beat the eggs, then add the milk, canola oil, and vanilla extract. Whisk until well combined.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix, as this can make the muffins tough.
- Using an ice cream scoop, portion the batter evenly into the liners.
- Bake for 18-20 minutes, or until the tops are domed and golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and let the muffins cool on a wire rack for about 10 minutes, or until cool enough to handle.
- Set up a dipping station with the melted butter in one small bowl and the granulated sugar in another.
- Gently dip the top of each muffin in the melted butter, shaking off any excess, then press into the sugar to coat. Repeat with all muffins and set back on the cooling rack.
- Press a small heart-shaped cookie cutter about halfway into the top of each muffin, then carefully remove the cutter along with the heart-shaped piece of muffin (save it for snacking!).
- Fill each heart-shaped well to the top with raspberry jelly.

- For best results, use a good quality raspberry jelly.
- These muffins are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
- If you prefer a different flavor, try using strawberry or apricot jelly.
