Description

A classic Polish appetizer, this raw beef tartare is a vibrant mix of textures and flavors. Easy to customize to your liking!


Ingredients

  • 1/4 lb (113 g) beef sirloin, very fresh
  • 1 egg yolk
  • Pickled onion, to taste
  • Pickled cucumber, to taste
  • Fresh onion, finely chopped, to taste
  • Mustard, to taste
  • Kohlrabi, finely diced, to taste
  • Sweet pepper (paprika), to taste
  • A splash of wine vinegar, to taste
  • A few drops of neutral oil
  • A few drops of water
  • Sugar, a pinch, to taste
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs, for decoration
  • Bread, for serving

Instructions

  1. Chop or hand-mince the beef sirloin into small cubes. Place in a bowl and add chopped fresh onion and diced pickled cucumber.
  2. Season with salt, pepper, sweet pepper (paprika), the egg yolk, mustard, a few drops of oil and water. Mix gently to combine. Taste and adjust seasoning.
  3. Plate the tartare and decorate with pickled onions, diced kohlrabi, bread chips, fresh herbs, and a little extra mustard on the side.

Notes

This is a free-form recipe — add more kohlrabi if you love it, less onion if you don’t. Use only very fresh beef from a trusted source. Serve immediately.
