This is one of Vida’s favorite recipes. She likes to bake it for the Santos family on Sundays…


Ingredients

Units Scale
  • 3 ripe bananas peeled and mashed
  • 1/3 cup (80 ml) of melted butter (we use vegan butter)
  • 1 tsp of baking soda
  • pinch of salt
  • 3/4 cup (180 ml) sugar
  • 1 large egg - beaten
  • 1 tsp vanilla extract
  • 1 1/2 cups (360 ml) of all purpose flower
  • Note - you can add nuts (walnuts/pecans/almond) and/or chocolate chopped chips

Instructions

  1. Pre-heat oven to 350F
  2. Mash the bananas – once smooth, stir in melted the butter
  3. Add baking soda and salt. Stir in sugar, beaten egg and vanilla extract
  4. Pour the butter into loaf pan. Bake for 50 min to 1 hour at 350F
  5. Tah – Dah!
    You are done with your banana bread
