This is one of Vida’s favorite recipes. She likes to bake it for the Santos family on Sundays…

- 3 ripe bananas peeled and mashed
- 1/3 cup (80 ml) of melted butter (we use vegan butter)
- 1 tsp of baking soda
- pinch of salt
- 3/4 cup (180 ml) sugar
- 1 large egg - beaten
- 1 tsp vanilla extract
- 1 1/2 cups (360 ml) of all purpose flower
- Note - you can add nuts (walnuts/pecans/almond) and/or chocolate chopped chips
Instructions
- Pre-heat oven to 350F
- Mash the bananas – once smooth, stir in melted the butter
- Add baking soda and salt. Stir in sugar, beaten egg and vanilla extract
- Pour the butter into loaf pan. Bake for 50 min to 1 hour at 350F
- Tah – Dah!
