These juicy turkey burgers are bursting with Thai flavors. A vibrant mango salsa adds a sweet and spicy kick.

- 1 lbs (454 g) lean ground turkey
- 3-4 green onions
- 1/4 cup chopped fresh cilantro
- 1/2 cup panko breadcrumbs
- 1/2 of the peanut sauce
- Ciabatta Rolls
- 3 tbsp all natural smooth peanut butter
- 1 tbsp seasoned rice vinegar
- 2 tsp minced garlic
- 1 tsp sesame oil
- 2 tsp sriracha
- 1 tsp honey
- 1 tsp jarred minced ginger
- 1 mango
- 1 jalapeno pepper
- 1 garlic cloved
- The juice of one lime
- 1/4 tsp sriracha
- Salt and Pepper
Instructions
- Preheat your grill or grill pan to medium-high heat (approximately 375°F – 190°C).
- Peanut Sauce
- Combine all peanut sauce ingredients in a small bowl and whisk together.
- Burgers
- In a medium bowl, combine ground turkey, green onion, cilantro, panko, and peanut sauce. Mix well and form 4 patties.
- Grill the burgers for 4-5 minutes per side, until cooked through.
- Mango Salsa
- In a small bowl, combine mango, jalapeno, garlic, cilantro, lime juice, and sriracha. Toss to combine and set aside.
- Spread peanut sauce on the bottom half of each roll. Add a burger patty.
- Spread more peanut sauce over the burger, top with mango salsa, and add the top half of the roll.
Notes
- For extra flavor, marinate the turkey mixture for 30 minutes before grilling.
- If you don’t have panko breadcrumbs, you can substitute with regular breadcrumbs or crushed crackers.
- Store leftover burgers and salsa separately in airtight containers in the refrigerator for up to 3 days.
