Description

Flavorful veggie burgers made with sweet potato and cannellini beans. Top with your favorite spicy sauce for a delicious kick!


Ingredients

  • 2 cans white cannellini beans, drained
  • 1 large sweet potato, baked & mashed (about 2 cups) large sweet potato, baked & mashed
  • 1 tbsp garam masala or tikka masala
  • 1/4 cup thinly shredded carrots
  • 1/4 cup all-purpose flour
  • lemon juice
  • salt
  • red chili powder or cayenne pepper
  • 2 tbsp Panko bread crumbs
  • 1 tbsp (15 ml) vegetable oil

Instructions

  1. Mash the sweet potato and cannellini beans, then mix them together.
  2. Add the remaining ingredients, including all spices, flour, and breadcrumbs, and combine to make a smooth mixture.
  3. Cover with plastic wrap and refrigerate for at least one hour.
  4. Divide the sweet potato mixture into 6 parts.
  5. Grease your palms with oil if needed, and shape the mixture into thick burger patties.
  6. Refrigerate the patties for 30 minutes, or until ready to grill.
  7. Before grilling, roll the patties in breadcrumbs if needed, and place them directly on the grill.
  8. Alternatively, sauté the patties in oil in a pan over the stove until golden brown and cooked on both sides.
  9. To serve, place the patty on a bun, top with cheese, lettuce, tomatoes, onions, and fresh avocado.
  10. Sprinkle with spicy chutney, chipotle sauce, or horseradish sauce, and enjoy!

Notes

  • For a richer flavor, roast the sweet potato instead of baking it.
  • If the mixture is too wet, add more breadcrumbs or flour, one tablespoon at a time.
  • These burgers freeze well; wrap individually in plastic wrap and store in a freezer bag for up to 3 months.
