Description

Light as air, these meringue nests are topped with sweet berries.
Perfect with a glass of Beaujolais for a sophisticated dessert.

Ingredients

Units Scale
  • 1 cups (237 ml) assorted berries
  • 2 tbsp granulated sugar
  • 1.5 tbsp fresh lime or lemon juice
  • 4 large egg whites
  • A dash of salt
  • 4 tbsp powdered sugar
  • fresh mint leaves

Instructions

  1. Macerate the assorted berries: Place 3 quartered strawberries and whole blueberries, blackberries, and raspberries in a bowl. Sprinkle with granulated sugar and 1 tablespoon of lime/lemon juice. Toss and let sit at room temperature for at least 30 minutes, or cover and refrigerate overnight.
  2. Preheat oven to 425°F (220°C).
  3. Beat egg whites on low speed until foamy.
  4. Add 1/2 tablespoon of lime/lemon juice, a dash of salt, and powdered sugar gradually to the side of the bowl, beating on high speed until stiff peaks form.
  5. Create 6 mounds of egg whites on a parchment-lined baking sheet, making a well in the center of each.
  6. Bake for 3-5 minutes, or until lightly golden and firm.
  7. Let cool and transfer to a serving plate.
  8. Garnish with berries and mint leaves.
  9. Drizzle with berry syrup, if desired.
  10. Serve immediately.

Notes

  • For extra fluffy egg whites, ensure your bowl and beaters are completely grease-free.
  • If berries are particularly juicy, drain excess syrup before topping the meringue nests.
  • Store leftover meringue nests in an airtight container at room temperature for up to 1 day; they may soften slightly.
