Light as air, these meringue nests are topped with sweet berries.

- 1 cups (237 ml) assorted berries
- 2 tbsp granulated sugar
- 1.5 tbsp fresh lime or lemon juice
- 4 large egg whites
- A dash of salt
- 4 tbsp powdered sugar
- fresh mint leaves
Instructions
- Macerate the assorted berries: Place 3 quartered strawberries and whole blueberries, blackberries, and raspberries in a bowl. Sprinkle with granulated sugar and 1 tablespoon of lime/lemon juice. Toss and let sit at room temperature for at least 30 minutes, or cover and refrigerate overnight.
- Preheat oven to 425°F (220°C).
- Beat egg whites on low speed until foamy.
- Add 1/2 tablespoon of lime/lemon juice, a dash of salt, and powdered sugar gradually to the side of the bowl, beating on high speed until stiff peaks form.
- Create 6 mounds of egg whites on a parchment-lined baking sheet, making a well in the center of each.
- Bake for 3-5 minutes, or until lightly golden and firm.
- Let cool and transfer to a serving plate.
- Garnish with berries and mint leaves.
- Drizzle with berry syrup, if desired.
- Serve immediately.
Notes
- For extra fluffy egg whites, ensure your bowl and beaters are completely grease-free.
- If berries are particularly juicy, drain excess syrup before topping the meringue nests.
- Store leftover meringue nests in an airtight container at room temperature for up to 1 day; they may soften slightly.
