Description

Grilled shrimp, jalapeños, and plums make a surprisingly delicious summer skewer. Perfect for a light dinner or BBQ side.


Ingredients

  • 1 lbs (454 g) peeled and cleaned shrimp
  • 6 large jalapeños, seeded and cut into 1-inch chunks
  • 6 white plums (can substitute red plums or peaches), cut into 1-inch chunks
  • 2 bunches chopped cilantro
  • 3 tbsp olive oil
  • 3/4 cup Sprite for sweetness
  • 1 lime
  • Salt and pepper

Instructions

  1. Combine all ingredients except lime in a large, resealable bag and marinate for at least one hour.
  2. If using wooden skewers, soak them in water while the food marinates.
  3. Skewer shrimp, jalapeño, and plum. Grill over medium-low heat for about 8 minutes, squeezing lime juice onto each skewer until the shrimp is fully cooked.

Notes

  • For extra smoky flavor, grill the skewers over indirect heat for the last few minutes.
  • To prevent the shrimp from sticking to the grill, lightly oil the grates before cooking.
  • Leftover skewers can be stored in the refrigerator for up to 2 days; reheat gently in a pan or on the grill.
