Description
Grilled shrimp, jalapeños, and plums make a surprisingly delicious summer skewer. Perfect for a light dinner or BBQ side.

- 1 lbs (454 g) peeled and cleaned shrimp
- 6 large jalapeños, seeded and cut into 1-inch chunks
- 6 white plums (can substitute red plums or peaches), cut into 1-inch chunks
- 2 bunches chopped cilantro
- 3 tbsp olive oil
- 3/4 cup Sprite for sweetness
- 1 lime
- Salt and pepper
Instructions
- Combine all ingredients except lime in a large, resealable bag and marinate for at least one hour.
- If using wooden skewers, soak them in water while the food marinates.
- Skewer shrimp, jalapeño, and plum. Grill over medium-low heat for about 8 minutes, squeezing lime juice onto each skewer until the shrimp is fully cooked.
Notes
- For extra smoky flavor, grill the skewers over indirect heat for the last few minutes.
- To prevent the shrimp from sticking to the grill, lightly oil the grates before cooking.
- Leftover skewers can be stored in the refrigerator for up to 2 days; reheat gently in a pan or on the grill.
