This Summer Apricot and Feta Salad combines sweet apricots with salty feta for a refreshing and flavorful dish, perfect for warm weather dining.

- a few handfuls of lettuce or salad greens of your choice
- 4-6 fresh apricots, quartered (about 2-3 per person depending on size)
- feta cheese, crumbled, to taste
- 1 tsp dijon mustard
- 1 tsp maple syrup
- 2 tbsp apple cider vinegar
- 5 tbsp extra virgin olive oil
- a squeeze of fresh lemon juice, about a scant tbsp
- sea salt
- pepper
- a few sprigs of fresh tarragon, finely sliced
Instructions
- Wash the lettuce or salad greens thoroughly and spin them dry using a salad spinner.
- In a small bowl, whisk together the Dijon mustard, maple syrup, olive oil, salt, and pepper to create the dressing. Alternatively, combine these ingredients in a jar, seal it, and shake well until emulsified.
- Arrange the salad greens on a serving platter or in a large bowl.
- Scatter the quartered apricots over the greens.
- Sprinkle the crumbled feta cheese on top of the salad.
- Drizzle the dressing over the salad just before serving, and toss gently to combine.
Notes
For a more robust flavor, consider adding fresh herbs like basil or mint. This salad pairs well with grilled meats or as a light lunch on its own. Store any leftover dressing in the refrigerator for up to a week. Adjust the amount of feta and apricots based on personal preference.
