Description

This Summer Apricot and Feta Salad combines sweet apricots with salty feta for a refreshing and flavorful dish, perfect for warm weather dining.


Ingredients

Scale
  • a few handfuls of lettuce or salad greens of your choice
  • 4-6 fresh apricots, quartered (about 2-3 per person depending on size)
  • feta cheese, crumbled, to taste
  • 1 tsp dijon mustard
  • 1 tsp maple syrup
  • 2 tbsp apple cider vinegar
  • 5 tbsp extra virgin olive oil
  • a squeeze of fresh lemon juice, about a scant tbsp
  • sea salt
  • pepper
  • a few sprigs of fresh tarragon, finely sliced


Instructions

  1. Wash the lettuce or salad greens thoroughly and spin them dry using a salad spinner.
  2. In a small bowl, whisk together the Dijon mustard, maple syrup, olive oil, salt, and pepper to create the dressing. Alternatively, combine these ingredients in a jar, seal it, and shake well until emulsified.
  3. Arrange the salad greens on a serving platter or in a large bowl.
  4. Scatter the quartered apricots over the greens.
  5. Sprinkle the crumbled feta cheese on top of the salad.
  6. Drizzle the dressing over the salad just before serving, and toss gently to combine.

Notes

For a more robust flavor, consider adding fresh herbs like basil or mint. This salad pairs well with grilled meats or as a light lunch on its own. Store any leftover dressing in the refrigerator for up to a week. Adjust the amount of feta and apricots based on personal preference.
