- 5 fresh mint leaves, muddled or chopped
- 6 tablespoons strawberry rhubarb mint simple syrup
- 1/2 lime, juiced
- 2 ounces white rum
- Club soda, to top
- Ice cubes
Instructions
- Muddle the mint leaves in a glass to release their flavor.
- Add the strawberry rhubarb mint simple syrup and lime juice to the glass.
- Pour in the white rum and stir to combine.
- Fill the glass with ice cubes and top with club soda.
- Garnish with additional mint leaves if desired and serve immediately.
Notes
- Muddle the mint gently — five firm presses is enough. Shredding the leaves instead of bruising them turns the drink bitter and leaves flecks floating in the glass.
- Use the syrup at room temperature or chilled, not warm — warm syrup won’t mix evenly into a cold drink.
- Six tablespoons of syrup per drink runs sweet. Start with four if you’d rather the lime and rum lead.
