- Pinch of salt
- 1/2 cup strawberry jam
- 1 tablespoon good quality balsamic vinegar
- 2 tablespoons water
- About 7 or 8 basil leaves, cut into ribbons
- Olive oil, for cooking
- Optional: Goat cheese, for serving
Instructions
- Heat a drizzle of olive oil in a skillet over medium-high heat.
- Season the chicken breasts with a pinch of salt on both sides.
- Place the chicken in the pan and cook for about 5-6 minutes on one side, or until a nice golden brown crust forms.
- Flip the chicken breasts and reduce the heat to medium. Cook for another 5-6 minutes, or until the chicken is cooked through and no longer pink in the center.
- In a small bowl, mix together the strawberry jam, balsamic vinegar, and water until well combined.
- Pour the strawberry glaze over the chicken in the skillet. Allow it to simmer for 2-3 minutes, spooning the glaze over the chicken to coat it well.
- Remove the chicken from the heat and sprinkle with basil ribbons.
- Serve immediately, optionally topped with crumbled goat cheese, alongside a salad or sautéed vegetables.
