Description

This Strawberry Glazed Basil Chicken turns a simple chicken breast into a gratifying dish with the sweet and tangy flavors of strawberry jam and balsamic vinegar, complemented by fresh basil.


Ingredients

  • 2 boneless, skinless chicken breasts
  • Pinch of salt
  • 1/2 cup strawberry jam
  • 1 tablespoon good quality balsamic vinegar
  • 2 tablespoons water
  • About 7 or 8 basil leaves, cut into ribbons
  • Olive oil, for cooking
  • Optional: Goat cheese, for serving

Instructions

  1. Heat a drizzle of olive oil in a skillet over medium-high heat.
  2. Season the chicken breasts with a pinch of salt on both sides.
  3. Place the chicken in the pan and cook for about 5-6 minutes on one side, or until a nice golden brown crust forms.
  4. Flip the chicken breasts and reduce the heat to medium. Cook for another 5-6 minutes, or until the chicken is cooked through and no longer pink in the center.
  5. In a small bowl, mix together the strawberry jam, balsamic vinegar, and water until well combined.
  6. Pour the strawberry glaze over the chicken in the skillet. Allow it to simmer for 2-3 minutes, spooning the glaze over the chicken to coat it well.
  7. Remove the chicken from the heat and sprinkle with basil ribbons.
  8. Serve immediately, optionally topped with crumbled goat cheese, alongside a salad or sautéed vegetables.

Notes

For a more intense flavor, let the chicken marinate in the strawberry glaze for 30 minutes before cooking. This dish pairs well with a fresh green salad or sautéed vegetables. Store leftovers in an airtight container in the refrigerator for up to 2 days.
