- 150g caster sugar
- 60ml water
- 4 large strawberries, diced
- 1/3 cup (80 ml) plain flour
- 60g butter, chopped
- 2 tbsp (25 g) brown sugar
- 1 tbsp (15 g) white sugar
- 3 tbsp (45 ml) rolled oats
- 250g cream cheese, softened
- 1/2 cup (60 g) powdered sugar
- 1 tsp vanilla extract
- 1 cup (240 ml) heavy cream, whipped
- Extra strawberries, sliced, for layering
Instructions
- Preheat the oven to 180°C (350°F). To make the crumble, combine the plain flour, butter, brown sugar, white sugar, and rolled oats in a bowl. Mix until the mixture resembles coarse crumbs.
- Spread the crumble mixture onto a baking sheet lined with parchment paper. Bake for 10-15 minutes or until golden brown. Remove from the oven and let cool completely.
- For the strawberry syrup, combine the caster sugar, water, and diced strawberries in a small saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the strawberries break down, about 5-7 minutes. Remove from heat and let cool.
- In a large bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in the whipped cream until fully combined.
- To assemble the parfaits, layer the cream cheese mixture, strawberry syrup, crumble, and sliced strawberries in serving glasses. Repeat the layers until the glasses are filled.
- Chill the parfaits in the refrigerator for at least 1 hour before serving to allow the flavors to meld.
Notes
- You can substitute the crumble with crushed biscuits for convenience.
- These parfaits can be made ahead and stored in the refrigerator until ready to serve.
