These Strawberry Cheesecake Parfaits are a delightful, no-fuss dessert that layers creamy cheesecake filling with fresh strawberry syrup and a crunchy crumble topping.

Strawberry Syrup
- 150g caster sugar
- 60ml water
- 4 large strawberries, diced
Crumble
- 1/3 cup (80 ml) plain flour
- 60g butter, chopped
- 2 tbsp (25 g) brown sugar
- 1 tbsp (15 g) white sugar
- 3 tbsp (45 ml) rolled oats
- 2 tbsp (30 ml) flaked almonds
Macerated Strawberries
- 400g strawberries, sliced
- 1 tbsp (15 g) sugar
- 2 tsp (10 ml) orange liqueur (optional)
Cheesecake
- 400g cream cheese
- 250g mascarpone cheese
- Strawberry syrup
Instructions
- Preheat the oven to 180°C (350°F). To make the crumble, combine the plain flour, butter, brown sugar, white sugar, rolled oats, and flaked almonds in a bowl. Mix until the mixture resembles coarse crumbs.
- Spread the crumble mixture onto a baking sheet lined with parchment paper. Bake for 10-15 minutes or until golden brown. Remove from the oven and let cool completely, then break into pieces with your fingers. Store in a container until ready to use.
- For the macerated strawberries, combine the sliced strawberries, sugar, and orange liqueur (optional) in a bowl. Cover and refrigerate for a couple of hours.
- For the strawberry syrup, combine the caster sugar, water, and diced strawberries in a small saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the strawberries break down, about 5-7 minutes. Remove from heat and let cool.
- In a food processor, combine the cream cheese, mascarpone cheese, and strawberry syrup. Process until smooth.
- To assemble, alternately layer the macerated strawberries (with a little of their syrup) with the cheesecake mixture and crumble in serving glasses, ending with the cheesecake mixture. Repeat until the glasses are filled, then top with extra strawberries to decorate.
- Serve immediately if you’d like the crumble to remain crunchy.
Notes
- You can substitute the crumble with crushed biscuits for convenience.
- These parfaits can be made ahead and stored in the refrigerator until ready to serve.
