Description

Sweet and savory layers of yogurt, granola, fruit, and apricot-glazed bacon make this parfait a delightful breakfast or brunch treat. Easy to assemble and perfect for a weekend morning.


Ingredients

  • 1/4 cups (59 ml) Bonne Maman Apricot Preserves
  • 1/2 cups (118 ml) Fresh sliced strawberries or fruit of your choice
  • 1/4 cups (59 ml) Granola
  • 2-3 slices Bacon
  • 1 cups (237 ml) Yogurt

Instructions

  1. Heat a small nonstick skillet on the stovetop.
  2. Place uncooked bacon on a dish; spread Bonne Maman Apricot Preserves on one side.
  3. Place bacon in the skillet and cook until done. Set aside to cool.
  4. Chop the bacon, leaving ½ slice for garnish.
  5. Get a glass to build your parfait.
  6. In the glass, place a small bit of vanilla yogurt as the first layer. Add a tablespoon of granola, a tablespoon of strawberries, and a tablespoon of preserves.
  7. Add a layer of apricot-glazed, chopped bacon.
  8. Repeat layers until all ingredients are used.
  9. Garnish with the apricot-glazed bacon slice.
  10. Serve immediately or refrigerate.

Notes

  • For a richer flavor, use Greek yogurt instead of regular yogurt.
  • If fresh strawberries are unavailable, frozen strawberries (thawed and drained) work well.
  • To make ahead, prepare the layers separately and assemble the parfaits just before serving to prevent the granola from becoming soggy.
