- 4 artichokes
- 6 cups (1.4 L) water
- 1 1/2 tbsp minced garlic
- 1 tbsp olive oil
- Pinch of salt
- Hot sauce of your choice
Avocado Hollandaise Sauce:
- 1 ripe avocado
- 2 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 garlic clove, minced
- 2 tbsp olive oil
- 2-4 tbsp warm water (to thin)
- Salt and freshly ground black pepper, to taste
Instructions
- Make the avocado hollandaise: combine the avocado, lemon juice, Dijon mustard, and garlic in a blender or food processor. Blend until smooth. With the motor running, drizzle in the olive oil. Add warm water a tbsp at a time until the sauce reaches a pourable, hollandaise-like consistency. Season with salt and pepper. Set aside.
- Heat the water in a large pan over high heat until it boils. Add the minced garlic, olive oil, and a pinch of salt.
- While the water heats, prepare the artichokes by cutting the stems to a reasonable size and trimming the tops.
- Once the water is boiling, add the artichokes to the pan. Cover and reduce heat to a simmer.
- Cook the artichokes for about 25–30 minutes, or until the leaves can be easily pulled off.
- Remove the artichokes from the water and let them cool slightly.
- Serve the artichokes with the avocado hollandaise sauce and a dash of your favorite hot sauce.
Notes
- The avocado hollandaise is best made just before serving so it stays bright green.
- If it thickens as it sits, stir in another splash of warm water.
