Description

These Strawberry Mojito Popsicles are a refreshing summer treat, combining the fruity flavors of strawberries and lime with a hint of mint, and can be spiked with rum for an adult twist.


Ingredients

  • 250g (8.8 ounces) strawberries
  • 60ml (2 ounces) white rum
  • 60ml (2 ounces) lime juice
  • 60ml (2 ounces) simple syrup
  • Handful of mint leaves

Instructions

  1. Blend strawberries, rum, lime juice, simple syrup, and mint leaves until smooth.
  2. Pour the mixture into popsicle molds.
  3. Insert sticks and freeze for at least 4 hours or until solid.

Notes

For a non-alcoholic version, simply omit the rum. These popsicles can be stored in the freezer for up to 2 weeks. If you prefer a sweeter popsicle, adjust the amount of honey or maple syrup to taste. To create a more pronounced mint flavor, increase the amount of mint leaves slightly.
