- 3 cups watermelon, cubed and seeded
- 1/2 cup feta cheese, cubed
- 1/4 cup red radishes, roughly chopped (or finely diced red onion)
- 2 tablespoons fresh chives, finely chopped
- Juice of 1 lime
- 1 teaspoon fresh horseradish root, finely grated
Instructions
- Cube and seed the watermelon.
- Cube the feta cheese.
- Roughly chop the red radishes or finely chop red onion if substituting.
- Finely chop a small bunch of chives and add to the bowl.
- Squeeze the juice of one lime over the ingredients.
- Grate fresh horseradish root into the salsa after thoroughly rinsing and peeling it.
- Gently toss all ingredients together until well combined.
- Taste and adjust seasoning as desired.
