Description

A refreshing and spicy salsa combining juicy watermelon, tangy feta, and spicy horseradish, perfect for summer gatherings.


Ingredients

  • 3 cups watermelon, cubed and seeded
  • 1/2 cup feta cheese, cubed
  • 1/4 cup red radishes, roughly chopped (or finely diced red onion)
  • 2 tablespoons fresh chives, finely chopped
  • Juice of 1 lime
  • 1 teaspoon fresh horseradish root, finely grated

Instructions

  1. Cube and seed the watermelon.
  2. Cube the feta cheese.
  3. Roughly chop the red radishes or finely chop red onion if substituting.
  4. Finely chop a small bunch of chives and add to the bowl.
  5. Squeeze the juice of one lime over the ingredients.
  6. Grate fresh horseradish root into the salsa after thoroughly rinsing and peeling it.
  7. Gently toss all ingredients together until well combined.
  8. Taste and adjust seasoning as desired.
