- 1 cup (95 g) almond flour
- 1/2 cup (60 g) sorghum flour
- 1/2 cup (60 g) oat flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp cardamom
- 1/2 tsp nutmeg
- 1/4 tsp sea salt
- 1/2 cup (120 ml) maple syrup
- 2 large eggs
- 1 tsp vanilla extract
- 1 tbsp grated fresh ginger
- 6 tbsp (90 ml) coconut oil, melted
- 1/4 cup (60 ml) molasses
- 1/4 cup (60 ml) maple syrup (for glaze)
- 1/2 tsp vanilla extract (for glaze)
- 1/4 tsp cinnamon (for glaze)
Instructions
- Preheat your oven to 325 degrees Fahrenheit. Grease a donut pan with coconut oil or line with parchment paper.
- In a large mixing bowl, whisk together the almond flour, sorghum flour, oat flour, baking powder, cinnamon, cardamom, nutmeg, and sea salt.
- In a separate mixing bowl, combine the maple syrup, eggs, vanilla extract, grated ginger, and melted coconut oil. Mix until well combined.
- Using a spatula, fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix.
- Fill the donut pan with the batter, filling each cavity about 3/4 full.
- Bake in the preheated oven for 15-18 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
- While the donuts are baking, prepare the glaze by combining the molasses, maple syrup, vanilla extract, and cinnamon in a small saucepan over low heat. Stir until smooth and slightly thickened.
- Once the donuts are done, allow them to cool in the pan for 5 minutes before transferring to a wire rack.
- Dip the cooled donuts into the maple molasses glaze, allowing any excess to drip off. Place back on the wire rack to set.
Notes
- Store these donuts in an airtight container at room temperature for up to 3 days.
- For a nut-free version, substitute almond flour with an equal amount of all-purpose gluten-free flour.
- These donuts pair well with a hot cup of coffee or tea.
