Description

Flavorful roasted chickpeas and creamy tzatziki sauce
make these vegetarian gyros a satisfying meal.


Ingredients

  • 1 cups (237 ml) chickpeas
  • 1 Tbsp olive oil
  • 1 Tbsp paprika
  • 0.5 Tbsp ground black pepper
  • 0.25 Tbsp cayenne pepper
  • 0.25 tsp salt
  • 4 pita flatbreads
  • 1 cups (237 ml) tzatziki
  • 0.25 red onion
  • 2 lettuce leaves
  • 1 tomato

Instructions

  1. Pat dry chickpeas with a paper towel, removing any skins.
  2. Gently toss chickpeas with oil, paprika, black pepper, cayenne pepper, and salt.
  3. Spread chickpeas onto a greased rimmed baking sheet and roast at 400°F (204°C) for about 20 minutes, until lightly browned but not hard.
  4. Spread tzatziki onto one side of the pita, sprinkle with ¼ of the chickpeas, and add veggies.
  5. Fold the pita in half.

Notes

  • For deeper spice flavor, toast the paprika in a dry pan before adding it to the chickpeas.
  • If you don’t have pita bread, use warmed tortillas or even lettuce wraps instead.
  • Leftover spiced chickpeas can be stored in an airtight container in the refrigerator for up to 4 days and used in salads or bowls.
