Description

Favorite fudge brownies receive warm autumn flair from a homemade blend of chai spice.


Ingredients

Chai Spice Mix (makes more than needed — store the rest):

  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cardamom
  • 1/8 tsp ground cloves
  • 1/8 tsp ground black pepper (optional, for warmth)

Brownie Batter:

  • 85 g (3 oz) dark chocolate, roughly chopped
  • 90 g (6 tbsp) butter, room temperature
  • 100 g (1/2 cup) caster sugar
  • 2 leveled tbsp cocoa powder
  • 3 large eggs
  • 60 g (1/2 cup) all-purpose flour
  • 2 tsp chai spice mix (from above)

Instructions

  1. Preheat oven to 180°C (350°F). Line an 8×8 inch baking pan with parchment paper.
  2. Make the chai spice mix: stir together the cinnamon, ginger, cardamom, cloves, and black pepper (if using) in a small bowl. Set aside. You will use 2 tsp for this recipe; store the remainder in a sealed jar.
  3. Place the chopped chocolate and butter in a heatproof bowl set over a saucepan of gently simmering water, making sure the bowl does not touch the water. Stir until melted and silky smooth. Alternatively, melt in the microwave in 10-second bursts, stirring well each time.
  4. Stir in the caster sugar and cocoa powder.
  5. Add the eggs one at a time, incorporating well between each addition.
  6. Fold in the flour until just combined.
  7. Stir in the 2 tsp of chai spice mix and mix well.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 15–18 minutes, or until a knife or toothpick inserted into the center comes out with a few moist crumbs (not wet batter). Do not overbake.
  10. Remove from the pan and transfer to a wire rack to cool completely. The fudginess develops fully a few hours after baking.

Notes

  • Use a wooden spoon or rubber spatula throughout — not an electric mixer.
  • Whisking in air will make the brownies cakey rather than fudgy.
  • Take the brownies out of the hot pan immediately after baking so they don’t continue cooking in the residual heat.
