- 2 tbsp (30 ml) olive oil
- 1 lb (450 g) shrimp, deveined
- 2 cloves garlic, minced
- 1 medium onion, roughly chopped
- 1 small jalapeño, seeded and diced
- 1/4 tsp red pepper flakes
- 1 package campari tomatoes, roughly chopped
- 2 limes, juiced
- Salt and pepper, to taste
- 2 tbsp chopped cilantro
Instructions
- Heat 2 tbsp of olive oil in a large skillet over medium heat.
- Add the minced garlic, roughly chopped onion, and diced jalapeño to the skillet. Sauté for about 5 minutes, or until the onion has softened and is translucent.
- Add the roughly chopped campari tomatoes and 1/4 tsp red pepper flakes to the skillet. Cook for another 5 minutes, stirring occasionally, until the tomatoes start to break down.
- Season the shrimp with salt and pepper, then add them to the skillet. Cook for 3-4 minutes, or until the shrimp are pink and opaque.
- Remove the skillet from heat and stir in the juice of 2 limes and 2 tbsp of chopped cilantro. Mix well to combine all the flavors.
- Serve immediately, garnished with extra cilantro if desired.
Notes
- For a milder dish, reduce or omit the red pepper flakes.
- Serve with rice or crusty bread to soak up the delicious sauce.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
