- 2 tablespoons olive oil
- 1 lb shrimp, deveined
- 2 cloves garlic, minced
- 1 medium onion, roughly chopped
- 1 small jalapeño, seeded and diced
- 1/4 teaspoon red pepper flakes
- 1 package campari tomatoes, roughly chopped
- 2 limes, juiced
- Salt and pepper, to taste
- 2 tablespoons chopped cilantro
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the minced garlic, roughly chopped onion, and diced jalapeño to the skillet. Sauté for about 5 minutes, or until the onion has softened and is translucent.
- Add the roughly chopped campari tomatoes and 1/4 teaspoon red pepper flakes to the skillet. Cook for another 5 minutes, stirring occasionally, until the tomatoes start to break down.
- Season the shrimp with salt and pepper, then add them to the skillet. Cook for 3-4 minutes, or until the shrimp are pink and opaque.
- Remove the skillet from heat and stir in the juice of 2 limes and 2 tablespoons of chopped cilantro. Mix well to combine all the flavors.
- Serve immediately, garnished with extra cilantro if desired.
Notes
For a milder dish, reduce or omit the red pepper flakes. Serve with rice or crusty bread to soak up the delicious sauce. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
