- 1 cup (240 ml) white sugar
- 1/2 cup (120 ml) light corn syrup
- 1/4 tsp salt
- 1/4 cup (60 ml) water
- 1 cup (150 g) peanuts
- 2 tbsp (30 g) butter, softened
- 1 tsp baking soda
Instructions
- In a medium saucepan, combine 1 cup white sugar, 1/2 cup light corn syrup, 1/4 tsp salt, and 1/4 cup water. Bring the mixture to a boil over medium heat.
- Once boiling and the sugar has dissolved, stir in 1 cup peanuts.
- Continue to stir frequently until the mixture turns amber in color and reaches 300 degrees Fahrenheit on a candy thermometer, about 10-13 minutes.
- Remove the saucepan from heat and quickly stir in 2 tbsp softened butter and 1 tsp baking soda until well combined.
- Pour the mixture onto a greased baking sheet or a silicone baking mat. Spread it evenly before it begins to set.
- Allow the brittle to cool completely, then break it into pieces and enjoy.
