- 8 large Ocean scallops (2 per person)
- 1 Tbs unsalted butter
- 1 Tbs olive oil
- 1/2 cup fresh blueberries
- 1 Tbs balsamic vinegar
- 1 tsp honey
- Salt and pepper to taste
- 1 cup pea shoots
Instructions
- Pat the scallops dry with paper towels and season with salt and pepper.
- Heat the butter and olive oil in a skillet over medium-high heat.
- Add the scallops and sear for about 2-3 minutes on each side until golden brown.
- Remove the scallops from the skillet and set aside.
- In the same skillet, add the blueberries, balsamic vinegar, and honey.
- Cook for 2-3 minutes until the blueberries start to soften.
- Serve the scallops with the blueberry vinaigrette and garnish with pea shoots.
