Description

The risky flavor combo of scallops and blueberries pays off with a stunning, high-drama dish.


Ingredients

Units
  • 8 large Ocean scallops (2 per person)
  • 1 Tbs unsalted butter
  • 1 Tbs olive oil
  • 1/2 cup fresh blueberries
  • 1 Tbs balsamic vinegar
  • 1 tsp honey
  • Salt and pepper to taste
  • 1 cup pea shoots

Instructions

  1. Pat the scallops dry with paper towels and season with salt and pepper.
  2. Heat the butter and olive oil in a skillet over medium-high heat.
  3. Add the scallops and sear for about 2-3 minutes on each side until golden brown.
  4. Remove the scallops from the skillet and set aside.
  5. In the same skillet, add the blueberries, balsamic vinegar, and honey.
  6. Cook for 2-3 minutes until the blueberries start to soften.
  7. Serve the scallops with the blueberry vinaigrette and garnish with pea shoots.
