Description

Elevated brunch waffles with feta and cheddar. Top with a fried egg and pesto for a wow factor.


Ingredients

  • 2 tsp Baking Powder
  • 1 tsp Salt
  • 1 cups (237 ml) Grated Cheddar/ Mozzarella Cheese
  • 1/2 cups (118 ml) Crumbled Feta Cheese
  • 1 tsp Dry Oregano
  • 1 tsp Pesto (Optional)
  • 2 Eggs
  • 1/2 cups (118 ml) Plain Yogurt
  • 1/2 cups (118 ml) Sour Cream
  • 3/4 cups (178 ml) Milk
  • ⅓ cups (80 ml) Vegetable Oil

Instructions

  1. In a bowl, mix the flour, baking powder, and salt until combined.
  2. Add the remaining ingredients and mix until a smooth, thick batter forms.
  3. Preheat your waffle maker.
  4. Pour ½ cup of batter onto the preheated waffle maker (adjust amount as needed based on your waffle maker’s instructions).
  5. Close the waffle maker and bake for 3-4 minutes.
  6. Remove the waffle and place it on an oven rack to prevent sogginess.

Notes

  • For a tangier flavor, use a sharper cheddar cheese.
  • To make ahead, prepare the batter the night before and refrigerate. Allow to come to room temperature before cooking.
  • Leftover waffles can be reheated in a toaster oven for optimal crispiness.
